Cowboy Cookies are delicious treats filled with chocolate chips, oatmeal and chopped pecans. They are slightly crispy on the outside and chewy with just a touch of chewiness on the inside. These sweet treats come together quickly and are packed with tasty treats.

- 2 cups All purpose flour
- 1 teaspoon Baking soda
- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cups Softened butter
- ¾ cups Sugar
- ¾ cups brown sugar
- 2 Eggs reheated at room temperature
- 1 teaspoon Vanilla
- 1-½ cup Semi-sweet chocolate chips
- 1-½ cup Oatmeal
- ¾ cups chopped pecans
- ½ cups Sweet coconut flakes (optional)
Preparation
Preheat the oven to 375°F. Cover baking sheets with parchment paper or silicone baking mats.
In a bowl, whisk together the flour, baking soda, baking powder and salt. Put aside.
Using a mixer, cream the butter and sugars until light and fluffy. Add the eggs one at a time and mix until combined. Stir in the vanilla and add the flour mixture in 3 parts. Continue to mix until combined, scraping down the bowl and beaters as you go.
Stir in chocolate chips, rolled oats, chopped pecans and shredded coconut (optional). Drop 1 1/2 heaped tablespoon onto parchment-lined baking sheets. Press lightly with the palm of your hand.
Bake until lightly browned, 9 to 11 minutes. Let the cookies cool for 5 minutes before placing them on cooling racks.
