Instead of the usual heavy, high-calorie dessert, try a healthy Korean dessert drink traditionally served after meals this summer.

- 8 cups Water
- 15 slices Ginger, unpeeled, cut into 1/2 inch pieces
- 5 sticks Cinnamon
- ¾ cups brown sugar
- 12 pieces Dried figs
- ¼ cups Pine nuts
Preparation
In a large saucepan, add water, ginger and cinnamon sticks. After boiling, reduce the heat and simmer for 30 minutes. The liquid color should turn dark burgundy. Strain and discard the ginger and cinnamon sticks.
Add the brown sugar while it is hot so that the sugar dissolves. Add the dried figs. Let the liquid sit in the saucepan until it comes to room temperature. Transfer to a large glass jar.
Store in refrigerator until cold. Serve cold. When ready to serve, add the pine nuts.
