This is a recipe hack that competition barbecue teams use to achieve extremely tender skin on smoked chicken thighs.

Ingredients
- 6 Chicken thighs with bone and skin
- ½ cups BBQ seasoning
- ½ cups Margarine
- ½ cups Barbecue sauce
Preparation
Trim the chicken thighs of excess fat and skin. Generously season the thighs with the barbecue seasoning.
Add the margarine to an 8×10 aluminum baking dish and spread evenly over the bottom. Place the chicken thighs skin side down in the aluminum pan. Smoke the thighs at 250ºF for 1 hour.
After 1 hour, remove the thighs from the pan and place them on the cooking grate skin side up. Reapply barbecue seasoning to the skin side of the chicken and add more sauce if desired. Continue cooking the thighs until an internal temperature of 185ºF is reached.
