This alcohol-free, sugar-free cucumber version of a classic Tom Collins cocktail is super refreshing and easy to make.

Ingredients
- 1 Cucumber, peeled
- 2 Lemons, Juice
- 330 milliliters carbonated water
- Ice cubes
Preparation
Puree the peeled cucumber using an immersion blender or food processor. Make sure there are no whole pieces of cucumber left.
Pour the cucumber puree and lemon juice into a shaker, close and shake well.
Place ice cubes in glasses and pour over the cucumber-lemon mixture. Top up with sparkling water and decorate as desired. Serve immediately!
