This is an amazing classic birthday cake with decadent chocolate cake covered in vanilla Swiss meringue buttercream for the best of both worlds!

- FOR THE CAKE:
- 2 cups All purpose flour
- 1 cup Granulated sugar
- 1 cup Dark brown sugar
- 1 cup Cocoa powder without sugar
- 2 teaspoons baking powder
- 1-½ tsp Baking soda
- ½ teaspoon Cinnamon
- 1 cup Milk
- ½ cups Vegetable oil
- 2 whole Eggs
- 2 teaspoons Godiva Chocolate Liquor
- 1 cup Boiling water
- FOR THE BUTTERCREAM:
- 4 whole Egg whites
- 1-½ cup Granulated sugar
- 1 pinch salt
- 4-½ sticks Butter softened at room temperature
- 1 teaspoon Vanilla extract
Preparation
Preheat the oven to 350ºF. Line two 9-inch cake pans with parchment paper and spray well with cooking spray.
Prepare a stand mixer with the paddle attachment and combine the flour, both sugars, cocoa powder, baking powder, baking soda, cinnamon and salt in its bowl. Mix them with the spatula just to aerate them, then slowly pour in the milk and oil, then the eggs and the chocolate liqueur. Finally, very slowly and carefully pour in the boiling water with the mixer at low temperature.
Divide the batter evenly between the two prepared pans, then bake for 30 to 35 minutes. A toothpick inserted in the center should come out completely clean. Let them cool in the molds for about 15 minutes, then unmold them to cool completely. Clean the stand mixer bowl and paddle as you will need them for the buttercream.
While the cake layers are cooling, prepare the aforementioned buttercream. Fill a small saucepan halfway with water and bring to a simmer. Combine egg whites, sugar and salt in a heatproof bowl and place over simmering water while you whisk. Continue whisking while gently cooking for a few minutes. Then, transfer it to the bowl of the stand mixer and use the whisk attachment to whip it to stiff peaks for a few minutes. It should be white and shiny. Then switch to the paddle attachment and slowly add the butter one stick at a time, ending with the half stick. Finally, stir in the vanilla to finish! It will be a luscious buttercream.
Place the first layer on a cake plate and spread a thick layer of frosting on it. Place the second layer on top and generously frost the top and sides of the cake. Decorate it as you wish with edible pearls, sprinkles, etc. Enjoy!
