Ingredients
- FOR THE CREPES:
- 1 cup All purpose flour
- 2 teaspoons baking powder
- ½ teaspoon Salt
- 1 tbsp Vegetable oil
- 1 cup Buttermilk
- 1 whole Egg
- FOR THE CINNAMON FILLING:
- 4 tablespoons Butter
- ⅓ cups brown sugar
- ½ tablespoon Cinnamon
- FOR THE GLAZE:
- 4 tablespoons Butter
- 2 ounces, weight Cream cheese
- ¾ cups Granulated sugar
- 1 teaspoon Vanilla
Preparation
For the pancakes:
In a large bowl, combine flour, baking powder and salt. Stir in oil, buttermilk and egg. Let the dough rest for a few minutes.
Spray skillet or griddle with nonstick cooking spray. Add about 1/2 cup of batter for each pancake. Watch for bubbles to form, then swirl in the cinnamon filling (see recipe below). Flip and cook for another 2 to 3 minutes.
For the cinnamon filling:
In a medium bowl, combine all ingredients. Place in a plastic bag and cut off the corner.
For the cream cheese frosting:
In a small bowl, combine all the ingredients. Pour over hot pancakes.
