These gluten-free flourless muffins are made entirely in a blender. Takes only 5 minutes to prepare and no mess to clean up. Simply a delicious and healthy muffin that everyone will enjoy.

Ingredients
- 2 cups Oatmeal
- 1 Apple, peeled, sliced (I used Honeycrisp)
- 1 Ripe banana
- 2 Eggs
- ½ cups Applesauce
- ⅓ cups Agave or honey
- 1 teaspoon Baking soda
- 1 teaspoon baking powder
- 2 teaspoons Cinnamon
- 1-½ tsp Vanilla extract
Preparation
Preheat the oven to 400ºF.
Add all ingredients to your blender and blend for about 1 minute or until well blended. This may vary depending on the machine you are using. I used a Vitamix, which took about 50 seconds.
Pour batter into muffin tins. If you don’t have paper muffin cups similar to the ones I used, you can use a muffin pan. It’s up to you.
Sprinkle with oats and popping sugar for a crispy bite and bake for 20 minutes or until an inserted toothpick comes out clean.
