This coconut cilantro brown rice recipe is a great way to jazz up plain brown rice with the addition of lime, cilantro, and coconut oil. Do it today!
- 1 cup Brown rice
- 1 tbsp coconut oil
- 2-½ cups Water
- 1 teaspoon Salt
- ½ Lime, Zest And Juice
- ½ cups Coriander
Wash the rice and set aside. If you have time, soak the rice 20 minutes ahead of time. This will reduce the cooking time.
Preheat a medium saucepan over medium-high heat for 1-2 minutes. Put the oil in the pan, then add the rice. Cook rice for 30 seconds, stirring often, until well coated. Stir in water with salt. Bring to a boil. Cover tightly and reduce heat to lowest setting; bake 45 minutes.
Fluff the rice with a fork. Stir in the zest, juice and cilantro. Serve hot.
