Fluffy pancakes with bananas, chocolate chips and pecans.

Ingredients
- 1 cup Plain flour
- 1 tbsp Sugar
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- ½ teaspoon Cinnamon
- 2 tablespoons Melted butter
- 1 cup Whole milk
- 1 whole Egg
- 1 teaspoon Vanilla extract
- 1 whole Large ripe banana (half mashed, half diced)
- ½ cups Semi-sweet chocolate chips
- ¼ cups chopped pecans
Preparation
In a large bowl, whisk together flour, sugar, baking soda, salt and cinnamon.
In another bowl, whisk the butter, milk, egg, vanilla extract and mashed banana. Add wet ingredients to dry and stir to combine. Stir in diced bananas, chocolate chips and pecans.
Pour the batter 1/4 cup at a time onto a preheated griddle. Flip when small bubbles form all over the surface of the pancakes. Serve with butter and maple syrup if desired.
Makes about 10 pancakes.
