Chocolate truffles are a creamy, delicious, melt-in-your-mouth dessert with a chocolate coating. They’re easy to make at home and you don’t need a lot of ingredients – the basic recipe only calls for 3 ingredients. They are also healthy with no added sugar.

- 3-½ ounces, weight Hazelnut
- 5-⅓ ounces, weight Fresh dates
- 1-¼ ounce, weight Cocoa powder
- FOR THE CHOCOLATE COATING:
- 1-¾ ounce, weight Dark chocolate (70%)
- 3 tablespoons Coconut milk (or other non-dairy milk)
- 3 drops Olive oil, or as needed
Preparation
For the truffles (makes 20 scoops):
Put the hazelnuts in a food processor or blender and blend until crumbly. Transfer the ground hazelnuts to a bowl.
Remove the pits from the dates and blend until a ball forms. If you use dried dates, soak them in water for a few hours before blending them.
Add the ground hazelnuts, dates and cocoa powder to a blender and mix well until everything comes together into a ball.
Form the truffle balls with your hands. You should be able to roll them into a ball neither too hard nor too soft.
For the chocolate dressing. put the chocolate and milk in a saucepan and melt over medium heat. When the chocolate has melted, add a few drops of olive oil for an extra shine.
Roll the chocolate truffles in the chocolate coating and place on a sheet of parchment paper. Refrigerate until they firm up nicely.
