Yum! The chocolate and orange mousse is one of the best combinations! In a light, bubbly French mousse of classic craftsmanship – gorgeous!

Ingredients
- 60 grams Baking Dark Chocolate
- 5 grams Butter
- 60 milliliters Whipped cream
- 1 whole Egg
- 15 grams Caster sugar
- 30 milliliters Freshly squeezed orange juice
- ½ Orange peel
Preparation
Break the chocolate into pieces and add it to a microwave-safe bowl with butter. Heat in 20 second increments, stirring in between. You don’t want the chocolate to be hot, literally just melted.
Whip the cream until stiff.
Separate the egg and whisk the yolk. In another bowl, add the sugar to the egg white and whisk until stiff peaks form.
Stir the egg yolk, orange juice and orange zest into the chocolate. Make sure the chocolate is not hot to the touch!
Fold the chocolate mixture into the cream using a spatula. Do not fold more than 8 times, no matter if it’s a little ridged. Add the egg white to the mixture, incorporating it again. The mixture should be fully combined, but try to use as few pleats as possible so as not to reduce the air in the mixture.
Pour or poach into containers and refrigerate for at least 3 hours to set. Enjoy with extra whipped cream, chocolate shavings and/or orange slices on top (not included in calorie count).
