Chocolate Chip Pudding Cookies are the ultimate cookie lover’s dream come true. The addition of vanilla pudding makes these confections exceptionally flavorful and moist. They will quickly become one of your family’s favorite cookies.
- 2-¼ cups All purpose flour
- 1 teaspoon Baking soda
- ½ teaspoon Salt
- 1 cup Softened butter
- 1 cup light brown sugar
- 1 box (3.4 oz. Size) Vanilla Instant Pudding Mix
- 1-½ tsp Vanilla extract
- 2 large eggs
- 12 ounces, weight Semi-sweet chocolate chips
Preheat the oven to 375ºF. Cover baking sheets with silicone mats or parchment paper.
Whisk together flour, baking soda and salt. Using a stand mixer or hand mixer, cream the butter and sugar until light and fluffy, scraping down the bowl and beaters. Add pudding mix and vanilla. Blend to combine and turn blender to low. Add the eggs one at a time, mixing after each one. Add flour mixture, scraping bowl and beaters several times. Turn off the mixer and stir in the chocolate chips.
Drop by heaping spoonfuls onto prepared cookie sheets. Bake for 8 to 9 minutes or until lightly browned. Cool for 5 minutes and place on cookie cooling racks.
