An easy one-bowl recipe for chocolate chip cookie dough rolled into bite-sized portions.
- 1 teaspoon Unsalted butter or coconut oil
- ¾ teaspoons Vanilla extract
- ⅔ teaspoons Stevia
- ¼ cups Unsweetened almond milk
- ¾ cups Oatmeal (gluten-free if needed)
- ⅛ teaspoons Salt
- 1 tbsp Chocolate chips
Place a sheet of parchment or wax paper on a baking sheet.
In a bowl, mix the butter, vanilla, stevia and almond milk. Microwave on high for 30 seconds to 1 minute to warm the milk and melt the butter. Stir well to incorporate.
Stir in oatmeal and salt until combined. Stir in the chocolate chips with a spatula.
Roll into bite-sized balls and place on a baking sheet. Store extra bites in an airtight container in your refrigerator. Enjoy!
