- FOR THE BLONDIES:
- 12 whole Chewy unwrapped caramels
- ½ cups Salted butter
- 1 cup Packaged brown sugar
- 1 tbsp Vanilla
- 2 whole large eggs
- ¾ cups Flour
- 1 cup Chocolate chips
- FOR THE GANACHE:
- 3 tablespoons Heavy cream
- 6 tablespoons Chocolate chips
Preparation
Microwave the caramels and butter together in a large microwave-safe bowl for 2 minutes until melted. Stir until smooth.
Stir in brown sugar and vanilla. The dough should be lukewarm but not boiling. If it’s still too hot, you can wait for it to cool or stir in the flour to cool it down. I’ve done both and had success with either method.
Once the dough is lukewarm, add the eggs. Stir in the flour if you haven’t added it yet. Add the chocolate chips. They may melt a bit, but that only adds to the flavor.
Pour batter into an 8×8 parchment lined pan. Bake at 350ºF for 25 to 30 minutes, until the top no longer seems damp. Blondes should not shake when shaken.
To make the ganache, pour the heavy cream into a microwave-safe bowl. Microwave for about 30 seconds, until boiling. Add the chocolate chips and stir to combine. Distribute on the blondes.
