Ingredients
- 1 tbsp ground flax
- 3 tablespoons Water
- 2 Bananas
- ¼ cups Peanut Butter
- ¼ cups coconut sugar
- 1 cup Plain flour
- ¼ cups Almond powder
- 1 teaspoon Baking soda
- ½ teaspoon baking powder
- ½ teaspoon Cinnamon
- 1 teaspoon Vanilla
- 1 tbsp The vinegar
- ¼ cups Vegetable Milk
- ¼ cups Chocolate chips
Preparation
Preheat the oven to 350°F. Make a flax egg by mixing flax seeds and water and set aside.
In a large bowl, mash the bananas with a fork. Put aside.
Peanut butter cream and sugar.
Mix the remaining dry ingredients.
Add the flax egg, vanilla, vinegar and milk to the peanut butter and sugar mixture. Mix well, then add it to the bananas and mix.
Add half of the dry ingredients to the wet and stir until almost combined. Add the rest of the dry ingredients and stir until just combined. Add the chocolate chips and mix lightly, until the chocolate chips are evenly distributed.
Bake for 18 minutes or until a toothpick inserted in the center of a muffin comes out clean. Let cool for at least 20 minutes.
