An amazing and hearty breakfast recipe with a great blend of protein and healthy fats from avocado. The chicken curry mix is sweet and fruity with a great added crunch.
- 100 grams Cooked chicken breast
- 10 grams Chopped grapes
- 8 grams Crushed walnuts
- 25 grams Celery cut into small dice
- 10 grams Diced red onion
- 50 grams Low fat natural yogurt
- 1 teaspoon Tikka curry powder
- 1 whole Avocado, halved
Prepare all ingredients as described above. In a large bowl, combine everything except the avocado.
Cut the avocado in half and remove the pit. Use a spoon to scoop out some flesh and widen the crater where the stone was. Add the chicken mixture to the hollow of the avocado and serve!
