Ingredients
- FOR THE CHICKEN:
- 2 cloves Garlic, grated
- 2 pounds Boneless chicken breast
- Adobo seasoning to taste
- Kosher salt and freshly ground pepper, to taste
- FOR THE SALAD:
- ½ Yellow bell pepper, chopped
- ½ Red pepper, chopped
- 1/2 red onion, chopped
- 3 plum tomatoes, chopped
- ten Pitted green olives, chopped
- ½ Bunch of fresh cilantro, chopped
- 3 tablespoons White vinegar
- 1 Lemon, juice
- 15-½ ounces, fluid Sweet and chunky salsa
- Kosher salt and freshly ground pepper, to taste
Preparation
Season the chicken breast with grated garlic, adobo seasoning, kosher salt and freshly ground pepper. Boil the chicken breast until fully cooked. Shred and reserve.
In a large bowl, add the shredded chicken breast, peppers, chopped onions, chopped tomatoes, olives, fresh cilantro, vinegar, lime juice and heavy salsa. Mix well. Adjust seasoning and refrigerate until ready to serve.
