Chicken Fiesta is a recipe inspired by a restaurant menu item. The hot grilled chicken breast contrasts beautifully with the cold lettuce, salsa and cheese. Very quick and easy to prepare.

Ingredients
- 2 tablespoons Olive oil
- 4 Boneless skinless chicken breasts
- Kosher salt and pepper
- 4 cups shredded lettuce
- ½ cups salsa
- ½ cups Shredded Mexican Blend Cheese
Preparation
Heat the oil in a large skillet. Season both sides of the chicken breasts with kosher salt and black pepper. Cook the chicken several minutes on each side until browned and cooked through. Remove from heat and let cool for a few minutes.
For each serving, place 1 cup shredded lettuce on each plate. Top with cooked chicken breast, 2 tablespoons of your favorite salsa and 2 tablespoons shredded Mexican cheese blend.
Note: Large or thick chicken breasts can be halved lengthwise before cooking,
