This fantastic Chicken Fajita Casserole combines delicious chicken breasts perfectly seasoned with fajita spices, red and orange peppers, brown rice and salsa-style tomatoes. It’s topped with lots of cheddar jack and a dollop of sour cream and salsa.

Ingredients
- 1-¼ pound Chicken breast, cut into bite-sized pieces
- 2 tablespoons Olive oil
- 1-½ tsp garlic powder
- 1-½ tsp chili powder
- 1-½ tsp Cumin
- ½ teaspoon Paprika
- 2 tablespoons Lime juice
- 1 tbsp Honey
- 1 tbsp Vegetable oil
- 1 Small onion, chopped
- 1 Red pepper, chopped
- 1 Orange pepper, chopped
- 2 cups Cooked rice
- 1 box (14 1/2 Oz. Size) Salsa Style Or Fire Roasted Tomatoes
- 1-½ cup Grated Cheddar Jack
- Salsa and sour cream, for serving (optional)
Preparation
Preheat the oven to 350ºF.
Combine chicken, olive oil, garlic powder, chili powder, cumin, paprika, lime juice and honey in a large resealable bag. Place in the refrigerator and marinate for 30 minutes.
Heat vegetable oil in a large ovenproof skillet over medium-high heat and cook chicken until starting to brown, about 4 to 5 minutes. Add onions and peppers and cook 2 to 3 minutes. Stir in cooked rice, salsa-style tomatoes and top with grated cheese.
Bake for 20 to 25 minutes. Serve with salsa and sour cream.
