Linzer Butter and Jam Proof Chevre Hazelnut Cookies are delicious, festive and a delicious holiday treat!

Ingredients
- ¾ cups Butter, room temperature
- ¾ cups Sugar
- 4 ounces, weight Goat cheese, room temperature
- 1 Egg yolk
- 1 teaspoon Vanilla
- 1-½ cup Flour
- ¾ cups Lightly Toasted, Finely Ground Hazelnuts
- ½ teaspoon Salt
- ½ cups Berry jam
- Powdered sugar, for garnish
Preparation
Beat butter and sugar with electric mixer until light and fluffy. Add goat cheese and beat until incorporated. Beat egg yolk and vanilla.
In a medium sized bowl, whisk together the flour, ground hazelnuts and salt. Add to butter mixture and mix until just combined.
Remove the dough from the mixing bowl and shape it into a flat disc. Wrap in plastic wrap and refrigerate for at least 30 minutes.
Preheat the oven to 350ºF.
Roll out the cooled dough on a floured surface, about ¼ inch thick. Use Linzer cookie cutters to make cookies. Leave one whole for the base of the cookies and some with the hole cut in the middle for the tops of the cookies. Place cookie bases on a parchment-lined cookie sheet and bake cookies 10 to 12 minutes, or until edges are golden brown.
Cool completely. Spread the jam on the flat side of each cookie base. Dust the tops of the cookies (cookies with cutouts) with powdered sugar and place on top.
