These delicious Cherry Pie Bars bring out the best in cherries. The crumble topping is so amazing and complements the cherries with the perfect combination of tart and sweet. It’s hard not to pick up the little crumbs that end up on your plate and sweep them into your mouth.
- ¾ cups Sugar
- ¾ teaspoons baking powder
- 2-¼ cups All purpose flour
- ½ cups Softened butter
- 1 big egg
- 1 teaspoon Vanilla extract
- 1 teaspoon Almond extract
- ⅓ cups Old fashioned rolled oats
- 1 box (21 oz size) Premium Cherry Pie Filling
Preheat the oven to 350ºF. Spray a 9×9-inch baking dish with nonstick cooking spray.
In a medium bowl, whisk together sugar, baking powder and flour. Cut in the butter with a pastry knife until the mixture is crumbly.
In a small bowl, whisk the egg, vanilla and almond extract. Slowly incorporate the egg mixture into the flour-butter mixture.
Remove 1 1/2 cups of the mixture to a separate bowl. Stir in oats and set aside.
Gently press the breadcrumb mixture (without oats) into the bottom of the baking dish. Top with cherries, then bread crumb and oat mixture. Bake for 55 to 60 minutes or until lightly browned and bubbly around the edges.
