Tender cauliflower is combined with a light cheese sauce. A vegetarian side dish that is kid-approved.

Ingredients
- 1 head Cauliflower, chopped
- 2 tablespoons Butter
- 2 tablespoons Flour
- 1 cup Milk
- ¼ teaspoons Salt
- ¼ teaspoons Pepper
- ½ teaspoon garlic powder
- ¼ teaspoons Nutmeg
- 2 tablespoons Parmesan cheese
- ¾ cups Cheddar cheese, divided
Preparation
Core the cauliflower and cut it into similar sized pieces. Add to a pot of water and boil for 15 minutes. Remove the cooked cauliflower from the pot and drain it. Preheat the oven to 350ºF.
In the same saucepan, add the butter and cook over medium heat to melt it. Once melted, whisk in the flour 1 tablespoon at a time and stir to combine. Add the milk and continue whisking until it begins to thicken. Add salt, pepper, garlic powder, nutmeg, then Parmesan. Whisk to combine. Add 1/2 cup cheddar cheese and stir until melted and completely combined.
Return the cauliflower to the pan and toss the sauce and cauliflower so that the cauliflower is fully coated. Transfer the cauliflower to a greased ovenproof bowl, then sprinkle with the remaining 1/4 cup cheddar cheese.
Bake at 350ºF for 15 minutes. Enjoy!
