Rule #257: Cheese is always a good idea.
It’s the season to get rid of the LBs and eat a little healthier, right? Well, my dieting friend, if you need to find a good rice substitute for your everyday meals, this is just the thing. It will take you less than 15 minutes to prepare, and it comes in at around 160 calories per serving (this recipe makes 2 very good sized servings).

Ingredients
- 2 tablespoons Extra virgin olive oil
- 1 bag (14 oz. size) Cauliflower chunks (or 1 head cauliflower, shredded)
- 1 ounce, liquid Colby Jack cheese, grated (or Cheddar)
- ¼ teaspoons Kosher salt
- ⅛ teaspoons Freshly ground black pepper
Preparation
In a large skillet over medium-high heat, heat the oil until simmering. Add cauliflower, toss to coat and sauté until golden brown (about 10 minutes). Sprinkle with cheese, stirring constantly and cook an additional minute until the cheese melts. Stir in salt and pepper.
