Delicious cheese empanadas.
- 4 cups All-purpose flour, plus more for working dough
- 1-½ tsp Kosher salt
- ¼ teaspoons White sugar
- 1 whole Egg
- 1 Egg yolk
- 1 cup Water, plus 1 tbsp
- ½ cups Melted butter
- 4 cups Grated Monterey Jack cheese for garnish
- 2 cups Canola oil, or as needed for frying
Combine all-purpose flour, salt and white sugar in a large bowl. Make a well in the middle.
Whisk the egg, egg yolk and water. Add the egg and water mixture and melted butter to the well. Slowly mix all the ingredients together with a fork until well blended.
Knead the dough and cut it into 4 balls. Leave the dough to rest for 15 minutes, covered with plastic wrap.
On a lightly floured surface, roll out the dough. Cut out circles 4 inches (10 cm) in diameter using an empanada press.
Fill each empanada with cheese and press using the empanada press. Fry in canola oil.
