A creamy mash, a bit like mashed potatoes, but made with celeriac. Really simple and delicious and makes a great side dish to any meal.

Ingredients
- 1 whole Celeriac, peeled and cut into large chunks
- 2 whole Medium Potatoes, Peeled And Cut Into Quarters
- 2 cups Heavy cream
- 6 cups Water, or enough to cover the potatoes and celery root
- 4 tablespoons Butter without salt
- 1 teaspoon Salt to taste
Preparation
Start by adding the celeriac, potatoes, heavy cream and water to a medium saucepan. Bring to a boil, then reduce the heat and simmer for about 40 minutes or until the vegetables are tender.
Remove about 1 cup of cream and set aside. Strain the mixture, then use a hand blender or tamper to make a smooth puree. Stir in reserved cream, butter and salt. Taste for any additional salt.
The result is something you’d think was mashed potatoes, but it’s not. Maybe it’s something better! This stuff is super creamy, light and just has that little earthiness that I know your guests will be trying to guess. I’m glad I picked this up at the farmer’s market, and I know I’ll be making it again before the winter is out. Hope you enjoy!
