This slightly sweet and smoky dish is a great way to enjoy garden-fresh green beans.

- 16 ounces, weight Fresh green beans
- 4 slices Bacon
- ¼ cups The water
- ¼ cups Finely chopped onion
- Ground black pepper to taste
- 3 tablespoons brown sugar
Preparation
Wash the green beans and cut the ends. Cut longer beans in half if you prefer them that way. Put aside.
In a heavy 10 or 12 inch skillet, cook the bacon over medium heat until crisp. Remove the cooked bacon and crumble it. Discard all but 2 tablespoons of bacon grease from the pan.
Add the water, onion and green beans to the skillet. Add a few pinches of pepper to the green beans and stir. Cover skillet and cook over medium heat, stirring occasionally, for 12 minutes. Onions and some beans will darken by the end of the 12 minutes, so stir more often.
Reduce heat to medium-low, uncover and stir in brown sugar. Continue cooking, uncovered, stirring for another 2 minutes while the sugar caramelizes and coats the beans.
Remove from heat and serve immediately.
