Ingredients
- 2 cups All purpose flour
- ½ cups cooking oats
- 1 teaspoon baking powder
- ½ tablespoon Ground cinnamon
- ½ teaspoon Salt
- 2-¼ cups Light brown sugar, packaged
- ⅔ cups Unsalted butter, melted
- 3 whole Eggs
- 1 teaspoon Vanilla extract
- 2 cups Diced apples, skins removed
- 1 cup Pieces of salted caramel chips
Preparation
Preheat the oven to 350ºF. Spray a 9×13 dish (or similar size) with cooking spray and set aside.
Add the flour, rolled oats, baking powder, cinnamon and salt to a bowl and mix well.
In another mixing bowl (you can do this by hand if you wish), add the sugar and butter. Turn on your miser and start creaming the butter and sugar. While mixing, add vanilla and eggs, one at a time. Blend until creamy.
Slowly add the flour mixture and continue mixing. After about a minute, stop mixing and scrape down the sides of the bowl. Continue to stir over low heat, then add the apples and caramel chips. Mix well.
Transfer the mixture to the baking dish. Spread and form gently in the dish. Bake for about 45 minutes, but check after about 40 minutes. I check the middle, like I would for cakes or brownies, and insert a knife in the middle. If it comes out mostly clean, you’re good to go. Let cool to room temperature before cutting into bars.
