Use some of those zucchini with this fun spin on a classic.

- 2 whole Medium zucchini, sliced 1/4 inch thick
- ½ cups Diced seeded tomato
- 2 tablespoons Chopped fresh basil
- 2 teaspoons Olive oil
- 1 teaspoon Red wine vinegar
- ¼ teaspoons Kosher salt
- ¼ teaspoons Freshly ground black pepper
- ¼ cups Grated part skim mozzarella cheese
Preparation
Grill the zucchini for 2 minutes on each side.
Preheat grill.
Combine tomato, basil, olive oil, vinegar, salt and pepper in a bowl. Arrange the grilled zucchini on a foil-covered baking sheet. Top evenly with tomato mixture and mozzarella cheese. Grill for 2 minutes or until cheese melts.
