We make this simple creamy kale and carrot salad with mostly wholesome yogurt dressing and spicy pickle juice often with us. It’s fast and nutritious.

Ingredients
- ¾ cups Greek yogurt
- ¼ cups Mayonnaise
- 2 tablespoons pickle juice
- ⅛ teaspoons Organic garlic powder
- ¼ teaspoons Sea salt
- ⅛ teaspoons Freshly ground black pepper
- 1 stem Organic celery
- 16 ounces, weight Pre-Cut Carrot Slaw Mix
- Spicy pickle pickles, for garnish
Preparation
Start by adding Greek yogurt, mayonnaise, pickle juice, organic ground garlic, sea salt and freshly ground black pepper to a bowl and whisk until smooth.
Cut the celery stalk into small pieces. Add pre-cut carrot and slaw mix and diced celery to a larger bowl. Pour it dressing over the top of the mixture and stir until all the vegetables are covered.
Let the mixture sit for about 10 minutes so the vegetables can start to absorb the dressing. Stir once more. Garnish with some spicy pickles, serve and enjoy.
