This breakfast quesadilla is made with melted mozzarella cheese, a fried egg, and tangy guacamole on top! Don’t forget to add a few slices of jalapeño for that extra zest.

Ingredients
- 1 Avocado, pitted
- ½ Red onion, diced
- ½ cups Chopped parsley
- 1 Lime, Juice
- 4 Tortillas
- 1 cup Grated mozzarella cheese
- 1 tbsp Olive oil
- 2 Eggs
- Salt and pepper to taste
- Jalapeno slices, for serving (optional)
Preparation
Combine the avocado with the diced onion, chopped parsley, lime juice, salt and pepper and mix well to mash the avocados. Put aside.
Heat a large skillet on the stove over high heat. Add 1 tortilla to the pan with 1/2 cup mozzarella sprinkled on top. Seal the quesadilla with another tortilla and let crisp 1 to 2 minutes on each side. Repeat with remaining tortillas and mozzarella
Once the quesadilla is removed, add oil to the pan and fry the eggs for 2-3 minutes until the whites are completely cooked through and the yolks are runny.
To assemble, place the quesadilla on the plate. Place a fried egg on top, followed by a dollop of guacamole with slices of fresh jalapeño.
