Ingredients
- 2 pounds Small red potatoes (about 7) cut into 1 inch wedges
- 1 Green or red bell pepper, diced
- 1 Yellow or white onion, diced
- 1 tbsp Olive oil
- ½ teaspoon Salt
- ½ teaspoon Black pepper
Preparation
Heat the oven to 425ºF.
Place all the ingredients in a large bowl and mix well. Transfer to a parchment-lined cookie sheet and bake for 30 minutes, stirring halfway through.
After 30 minutes of cooking, check the desired crispiness. Return to oven over high heat for 5 minutes to crisp up. Check the oven often, broiling can burn potatoes quickly!

Note: You can cut the potatoes into small cubes if you are using them for breakfast burritos. Simply reduce the cooking time by 5 minutes.
