Quick and Easy Griddle Breakfast Potatoes! Using 6 simple ingredients, what an easy way to make tasty, crispy potatoes. I know the title is Potatoes for Breakfast, but you can enjoy it any time of the day or night!

Preparation: 5 minutes

To cook: 35 minutes

Level: Easy

Serves: 4

Ingredients

  • 2 pounds Small red potatoes (about 7) cut into 1 inch wedges
  • 1 Green or red bell pepper, diced
  • 1 Yellow or white onion, diced
  • 1 tbsp Olive oil
  • ½ teaspoon Salt
  • ½ teaspoon Black pepper

Preparation

Heat the oven to 425ºF.

Place all the ingredients in a large bowl and mix well. Transfer to a parchment-lined cookie sheet and bake for 30 minutes, stirring halfway through.

After 30 minutes of cooking, check the desired crispiness. Return to oven over high heat for 5 minutes to crisp up. Check the oven often, broiling can burn potatoes quickly!

Serve and enjoy!

Note: You can cut the potatoes into small cubes if you are using them for breakfast burritos. Simply reduce the cooking time by 5 minutes.
