Ingredients
- FOR THE SIMPLE MINT/LIME SYRUP:
- ½ cups Water
- ½ cups Sugar
- 1 teaspoon Lime zest
- 3 strands Fresh mint
- FOR THE BOYSENBERRY MOJITO:
- 5 whole Fresh mint leaves, plus more for garnish
- 6 set Fresh or frozen (thawed) boysen berries, plus more for garnish
- Crushed ice
- 2 ounces, liquid White Or Silver Rum
- 1 ounce, liquid Mint/Lime Simple Syrup
- ½ ounce, liquid Fresh lime juice
- 2 ounces, liquid Sparkling water to refuel
- Lime wheel, for garnish
Preparation
For the mint-lime simple syrup:
Combine water and sugar in a saucepan and reduce heat to medium. Continue to stir until all the sugar is dissolved. Remove from the heat and add the lime zest and mint. Allow to cool completely before use.
For the boysenberry mojitos:
In a tall glass, add the mint leaves and boysenberries, and about 2 tablespoons of crushed ice. Using the handle of a wooden spoon, mash the mixture, pressing all the ingredients into the glass, breaking them up to make a paste.
Fill the glass to the brim with crushed ice, then add the rum, simple syrup and lime juice. Using a long spoon, combine the ingredients. Garnish with sparkling water, lime wedge, fresh boysenberry and mint. Enjoy!
Note: You can use blackberries, raspberries or blueberries instead of boysenberries.
