These incredible Bourbon Glazed Carrots are perfectly cooked in a very large skillet in about 20 minutes and are perfect for all your holiday meals.

Ingredients
- ½ cups Butter
- 2 pounds Carrots peeled and cut into bite-sized pieces
- ½ cups Bourbon Whiskey
- ½ cups brown sugar
- ¼ teaspoons Cinnamon
- ⅛ teaspoons Ground cayenne pepper
- Salt and pepper to taste
- ⅔ cups Pomegranate seeds, to garnish
Preparation
In a large skillet over medium high heat, melt the butter. Add carrots and cook until beginning to brown around edges, stirring frequently, about 7 to 8 minutes.
Remove the pan from the heat and carefully add the whisky. Return the pan to the heat and cook until the whiskey is almost completely gone, about 3 minutes. Stir frequently.
Sprinkle with brown sugar, cinnamon and cayenne pepper. Continue cooking until the carrots are tender, stirring frequently. Increase the heat to medium-high at the last minute to thicken the glaze. Salt and pepper to taste. Sprinkle with pomegranate seeds and serve.
