This Boneless Chicken and Sweet Potato is a nutritious and healthy recipe but won’t consume too much of your time with a simple procedure.

- 2 books Boneless skinless chicken breasts, cut into small pieces
- Olive oil, as needed, plus extra for serving
- 3 tablespoons Spicy Seasoning Blend
- 3 Sweet potatoes, peeled and diced
- 6 bunches of broccoli
- Coarse Sea Salt and Freshly Cracked Pepper
Preparation
Preheat the oven to 425ºF.
Toss the chicken pieces with the spices and a quick drizzle of olive oil. Stir to combine; refrigerate for about 30 minutes while you prepare the other ingredients.
Place vegetables on their own baking sheets (preferably with edges to catch drips etc.). Drizzle with olive oil and sprinkle generously with salt. Place the chicken on a separate baking sheet.
Cook everything for 12 to 15 minutes. Remove broccoli and chicken. Stir the sweet potatoes and roast for another 15 minutes or so.
Do! Make any toppings you want (I recommend avocado and hummus, plus lemon wedges and chives). Divide the portions into containers and be happy to have a wonderful dinner tonight.
