This Blueberry Walnut Salad is such an easy and refreshing summer appetizer with a gorgeous Blueberry Lemon Dressing to go with it!
- 3 cups baby spinach
- ¾ cups Roasted and chopped nuts
- ¾ cups Fresh blueberries
- FOR SCREWING:
- 2 tablespoons Fresh lemon juice
- 1 tbsp Blueberry Balsamic Vinegar
- ½ teaspoon Fresh lemon zest
- ½ cups Canola oil
Take a large bowl and mix in the spinach, toasted walnuts and fresh blueberries.
Whisk together lemon juice, blueberry balsamic and lemon zest in a small bowl. Continue whisking while slowly pouring in the canola oil to make a gorgeous dressing.
Serve the salad immediately with the dressing on the side.! Enjoy!
