This Blueberry Peach Mojito is the cocktail of all summer cocktails! Peach purée, homemade blueberry simple syrup, fresh mint and rum. It’s cocktail hour!

- FOR THE SIMPLE BLUEBERRY SYRUP:
- ½ cups Sugar
- ½ cups Water
- 1 cup blueberries
- FOR THE PEACH PURÉE:
- 1 whole Fishing
- FOR THE MOJITO:
- 10 whole Mint leaves
- ½ ounce, fluid Freshly squeezed lime juice
- 1-½ ounce, liquid Simple blueberry syrup
- 3 ounces, liquid Peach puree
- 1-½ ounce, liquid White Rum, Or More To Taste
- 1 dash club soda
Preparation
For the blueberry simple syrup:
In a medium saucepan, combine sugar and water. Place over medium heat and stir until sugar is dissolved. Keeping the heat on medium, stir in the blueberries and bring to a boil. This could take a few minutes. Once it starts to simmer, simmer for 3-4 minutes or until the blueberries have started to break down. You may need to adjust your heat up or down to maintain a simmer.
Carefully strain the blueberry mixture through a fine mesh strainer and let cool to room temperature. Use immediately or store in the fridge for up to a week in a closed container.
For the peach puree:
Place the washed peaches in your high power blender and blend until smooth. Strain through a fine mesh strainer.
For the blueberry peach mojito:
Gently mash the mint leaves with the lime juice. Stir in the syrup and peach puree. Add ice. Pour in rum and top with club soda. Stir gently and serve immediately. Garnish with additional mint and blueberries, if desired.
