Ingredients
- 2 cups Coconut milk
- ½ cups Chia seeds
- Sweetener, to taste (optional)
- 1 cup blueberries
Preparation
In a medium bowl, combine the coconut milk and chia seeds (sweetener too if you add any) then refrigerate for at least a few hours, or overnight.
In a saucepan, simmer the blueberries until they start to burst. Turn off the heat and mash with a potato masher. Refrigerate.
When ready, spread chia pudding and blueberry mixture into cups. Add desired toppings and serve.
