Blueberry Chia Seed Pudding is a delicious vegan breakfast option that’s easy to make and flavorful like never before!

Preparation: 5 minutes

To cook: 5 minutes

Ingredients

  • 2 cups Coconut milk
  • ½ cups Chia seeds
  • Sweetener, to taste (optional)
  • 1 cup blueberries

Preparation

In a medium bowl, combine the coconut milk and chia seeds (sweetener too if you add any) then refrigerate for at least a few hours, or overnight.

In a saucepan, simmer the blueberries until they start to burst. Turn off the heat and mash with a potato masher. Refrigerate.

When ready, spread chia pudding and blueberry mixture into cups. Add desired toppings and serve.
