Ingredients
- 2 cups Fresh blackberries
- 4 tablespoons Water
- ⅓ cups Sugar
- 2 cups vanilla ice cream
- 4 cups club soda
- Fresh mint for garnish
Preparation
Place berries and water in a blender and puree until smooth. Pour the mixture through a fine-mesh sieve that is fitted over a bowl or large measuring cup to strain out the blackberry seeds. Press any extra puree through the mesh with a spoon.
Take 1/3 cup of the mash and place it in a saucepan over medium-low heat. Add the sugar and whisk constantly until the sugar dissolves and the mixture comes to a simmer. Remove it from the heat and let it cool, then mix it with the remaining juice.
Fill tall glasses with a few scoops of ice cream. Pour the blackberry mixture over the top. Fill remaining glasses with club soda and stir. Serve immediately.
