A delicious forbidden rice salad with fruit and mint.

Ingredients
- 1 cup Forbidden Black Rice, Cooked
- 1 whole Peach, chopped small
- 1 cup Blueberries
- 1 bunch Mint, torn into pieces
- 2 tablespoons Olive oil
- 2 tablespoons Dear
- 1 whole Lime, Juice
- 1 tbsp Lime zest
Preparation
Mix the cooked rice with the peaches, blueberries and mint.
In another bowl, mix the oil, honey, lime juice and zest with a whisk. Pour over the rice.
Serve at room temperature.
