Belgian waffles with mascarpone, pecans and maple syrup are crispy on the outside and soft on the inside!

- 2 Eggs
- 1 stick Butter
- 2 cups Buttermilk
- 2 cups All purpose flour
- 2 teaspoons baking powder
- 1 teaspoon Baking soda
- 1 teaspoon salt
- Mascarpone Cheese, For Serving
- ½ cups Toasted pecans, for garnish
- ½ cups Maple syrup, for serving
Preparation
Heat the waffle iron. Separate the egg whites from the egg yolks.
To melt the butter. Add egg yolks and buttermilk to a large bowl and beat together. Add flour, baking powder, baking soda and salt and mix. Stir in the melted butter.
Beat the egg whites until soft and fold into the batter.
Spray waffle maker with cooking spray. Add 1/4 cup of batter to each quarter of the waffle iron, 1 cup total. Cook until golden brown, about 3 minutes. Spread mascarpone on each waffle, then top with toasted pecans and drizzle with syrup.
