These Banana Oatmeal Chocolate Chip Cookies are the perfect way to use up a ripe banana! These cookies are chewy and delicious, and since they contain banana and oats, they’re practically breakfast food!

Ingredients
- 1-¼ cup Plain flour
- ¾ cups Plus 2 tablespoons quick oats
- ½ teaspoon Baking soda
- ¼ teaspoons Plus 1/8 tsp salt
- ¼ teaspoons Cinnamon
- ½ cups Mashed ripe bananas (about 1 large banana)
- ¼ cups Softened butter
- ¼ cups Granulated sugar
- ½ cups brown sugar
- 1 whole big egg
- ¼ teaspoons Vanilla extract
- ½ teaspoon Lemon juice
- ¾ cups Semi-sweet chocolate chips
- ¼ cups chopped pecans
Preparation
Preheat the oven to 350ºF. Line two baking sheets with parchment paper.
In a bowl, combine the flour, quick oats, baking soda, salt and cinnamon. Put aside.
In the bowl of an electric mixer (or with a hand mixer), combine the banana puree, butter, white and brown sugars. Add egg, vanilla and lemon juice and beat to combine.
Slowly add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Stir in chocolate chips and pecans.
Drop cookies using a medium cookie scoop (about 2 tablespoons) onto baking sheets about 2 inches apart. Bake for 10-12 minutes until set but still slightly soft.
Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
