An incredibly indulgent alternative to banana bread. This is the perfect recipe if you have bananas in the kitchen that are getting a little overripe and use less refined sugar than many other recipes online.

Ingredients
- 140 grams Melted butter
- 80 grams Cocoa powder
- 150 grams Caster sugar
- ½ teaspoon Salt
- 1 teaspoon Vanilla extract
- 2 whole Eggs
- 4 tablespoons Honey
- 3 whole Bananas, divided
- 60 grams Plain flour
Preparation
Line the pan with parchment paper and preheat the oven to 180°C (355°F).
Add the melted butter to a large mixing bowl and sift the cocoa powder while mixing. Continue mixing while adding the sugar, salt and vanilla extract.
Continue mixing while adding the eggs and honey.
Mash 2 of the bananas – you want them a little lumpy to add texture to the brownies. Add them to the mixture and mix.
Continue to mix while sifting the flour. Stir it in carefully making sure the mixture is completely smooth.
Pour the mixture into your lined mold and gently flatten the top with the back of a wooden spoon. Cut the remaining banana lengthwise into strips and place over the brownie mixture.
Bake for 45 minutes.
