The taste of summer, cozy enough for fall. The perfect easy side dish!
- 8 whole Fresh tomatoes, halved and seeded
- 1 stick Butter
- ½ cups Panko breadcrumbs
- ½ cups Grated parmesan
- 1 teaspoon thyme leaves
- 1 teaspoon garlic powder
Preheat the oven to 350ºF. Arrange the tomatoes cut side up very close to each other in a baking dish. Bake at 350ºF for 15 minutes, then remove from oven and increase heat to 450ºF.
Meanwhile, prepare the garnish. Melt the butter in the microwave and stir in the panko, parmesan, thyme and garlic powder.
When the tomatoes are out of the oven, use your fingers to roll the panko mixture over the tomatoes. Return to oven and bake an additional 15 minutes or until topping is lightly browned on top.
Serve immediately with your favorite dinner. Enjoy!
