Easy to make, easy to cook and low in calories as a bonus! It’s a great healthy meal that will go with so many things: salads, potatoes and vegetables, rice, etc.

Ingredients
- 150 grams Skinless salmon fillet
- 1 teaspoon Olive oil
- Salt and pepper to taste
- 1 bulb (small) fennel
- ¼ whole Lemon, juice then a few thin slices reserved
- 1 branch Dill
Preparation
Preheat the oven to 180°C (355°F).
Cut a piece of aluminum foil about 10 by 10 inches. Lay flat on counter, shiny side up.
Place the salmon fillet in the middle of the foil. Drizzle with olive oil and season with salt and pepper.
Thinly slice the fennel bulb. Use a mandolin on a 3mm setting if you have one.
Spoon the fennel over the salmon. Garnish with lemon slices and dill and sprinkle lemon juice on top. Bring the sides of the foil around the long sides of the salmon to form a tent. Fold the top and open edges to create a sealed package.
Put in the oven for 20 minutes. Remove and serve. Be careful when opening the package, there will be steam inside!
