Simple basmati rice made with fried onions and cashew nuts. An easy Indian recipe to try to make at home if you are new to Indian cooking.

Ingredients
- 1 cup Basmati rice
- 2 cups Chopped onion
- ¼ cups Cashew nut
- 4 tablespoons Cooking oil, plus more oil for frying the onion and cashews
- 1 tbsp Butter
- 2 teaspoons Cumin seeds
- 1 stick Cinnamon
- 4 whole Cloves
- 2 Serrano pepper
- ¼ cups Mint leaves
- 2 cups Water
- 5-½ teaspoons Salt
Preparation
Soak the basmati rice in water for 20 minutes. Drain and reserve.
Meanwhile, sauté the onion and cashews until golden. Transfer to a tea towel and set aside.
In a saucepan, add the cooking oil and butter, then the cumin seeds, cinnamon, cloves. Fry until fragrant. Add the serrano peppers and mint leaves. Sauté for a few seconds.
Add water and bring to a boil. Add basmati rice and cook about 3/4 cooked. Add the fried onion, cashews and salt and cook for 8 minutes over low heat.
