Bacon jam is a relish made from bacon made by slowly cooking bacon, onions, garlic, brown sugar, vinegar and spices. It is absolutely divine and a must try. You can store for a little over a week in an airtight container in the refrigerator. Reheat it in the microwave for short intervals on reduced power.

Ingredients
- 1 pound Finely chopped hickory smoked bacon
- 2 Finely diced medium onions
- ½ teaspoon salt
- 2 cloves minced garlic
- 2 tablespoons brown sugar
- 2 tablespoons Cider vinegar
- ½ teaspoon Freshly ground black pepper
- ⅛ teaspoons Ground cayenne pepper
- ½ teaspoon Cumin powder
- ¼ cups Freshly brewed black coffee
- ½ teaspoon Balsamic vinegar
Preparation
In a heavy skillet or Dutch oven over medium heat, cook the bacon until crispy. Tilt the pan to one side and carefully ladle out all but 2 tablespoons of the excess fat. Add onions and salt, cook over low heat until golden and lightly caramelized. Add the garlic and cook an additional 1 minute. Tilt the pan and remove all but 1/2 tablespoon of excess fat.
Stir in the brown sugar, cider vinegar, black pepper, cayenne pepper, cumin and the prepared strong black coffee. Let mixture cook until slightly thickened and browned, 20 to 25 minutes. Remove from the heat and stir in the balsamic vinegar.
Serve hot on crusty French bread or crostini. Store leftovers in the fridge in an airtight container or mason jar.
