Whenever we have tacos for dinner, I plan to have this salad the next day with leftover tacos. Satisfying, tasty and filling enough for the biggest appetite. Suitable for Atkins, keto, chf, low carb, diabetic, low glycemic, gluten free, sugar free, dairy free if cheese is omitted.

Ingredients
- 2 cups Iceberg lettuce, chopped
- 2 ounces, weight Ground beef cooked with taco seasoning (see note)
- 1 ounce, weight Cheddar cheese, grated
- ½ ounce, weight Yellow onion, diced
- 3 whole Plain Sweet Cherub Tomatoes, quartered (about 0.75 ounce)
- FOR SCREWING:
- 2 tablespoons Best Foods/Hellman’s Real Mayonnaise (non-light version)
- 2 tablespoons La Victoria chunky chunky salsa, medium heat
- 1 tbsp Heinz Reduced Sugar Ketchup
- 1 tbsp Bragg’s Apple Cider Vinegar
- 1 drop Ez-Sweetz Liquid Sucralose
Preparation
Spread all the salad ingredients in a large bowl.
Mix all the dressing ingredients in a small bowl or measuring cup. Pour over the salad and serve.
Note: I always used leftover ground beef from taco night for this salad. If you don’t have ground beef already cooked, you’ll need to do this step first. Or use cooked, cubed chicken in place of the beef.
Tip: this dressing is sweet and spicy at the same time, and rich in fat dressing for lchf/keto. If you prefer less sweet or lower fat dressing for this salad, use 2 tbsp ranch dressing mixed with 2 tablespoons of your favorite salsa.
