A recipe that really saves time! And one of the only low carb chili recipes that includes beans. Pair it with sliced avocado or a cheese biscuit on the side to boost the fat. Suitable for Atkins, keto, chf, low carb, diabetic, low glycemic, gluten free.

Ingredients
- 3 containers (255g size) Atkins Chili Con Carne, thawed
- 1 box (Size 15 oz) Eden Farms Organic Black Soybeans, Drained and Rinsed
- ¼ cups Water
- ¼ cups Cheddar or Jack cheese, grated (to thicken)
- 3 tablespoons Tomato paste (I use Amore, in a tube)
- 2 tablespoons Red onion, chopped
- ½ teaspoon chili powder
- ¼ teaspoons Salt
- ¼ teaspoons garlic powder
- ¼ teaspoons Oregano
- ¼ teaspoons Cumin
- Optional toppings of your choice (see note)
Preparation
Thaw Atkins Chili Meals and pour into a medium to large saucepan.
Drain and rinse the black soy beans. Add the beans and everything else to the pot. Heat over medium heat, stirring, until boiling.
Taste and adjust the spices to your liking. Turn to the lowest simmer setting and let stand for at least 30 minutes, longer if you have time. This not only allows the flavors to develop, but simmering for a while sweetens the black soy beans. They are a little “al dente” straight out of the box.
Divide among serving dishes. Garnish, if desired, and serve.
Tip: Buy the frozen Atkins chili when it’s on sale, whip up a batch of this quick chili, and freeze it in individual servings for later.
