A quick and easy low carb, high fat side dish. Spinach is an excellent source of potassium! Suitable for Atkins, Keto, LCHF, Low Carb, Diabetic, Low Glycemic, Gluten Free, Sugar Free, Dairy Free.

Ingredients
- 1 tbsp Butter (bacon fat for dairy-free)
- 1 tbsp Onion, diced (or garlic)
- 5-½ ounces, weight Baby spinach leaves
- Salt and pepper to taste
- 1 tbsp Heavy whipping cream (omit for non-dairy products)
Preparation
Melt the butter in a medium to large skillet over medium heat. Add onion; cook onions until translucent and beginning to brown.
Add spinach. Leave to rest for a few minutes, then toss with tongs or flip with a spatula. Leave for a few more minutes. Continue turning until the spinach is just wilted. Add salt and pepper to taste.
Add the cream. Mix well to incorporate the cream. Turn off the fire. Continue to stir until the cream reduces and mixes with the spinach, another minute or two. To serve.
