Aunt Rocky’s German-Style Boiled Cabbage

Boiled cabbage makes a quick and easy side dish, with lots of flavor. It’s a German recipe. Suitable for Atkins, Keto, LCHF, Low Carb, Diabetic, Low Glycemic, Gluten Free, Grain Free, Sugar Free, Dairy Free, Nut Free, Coconut Free, Paleo, CKD, Low Potassium, Low sodium content, kidney diet, vegetarian, vegan.

Preparation: 5 minutes

To cook: 15 minutes

Level: Easy

Serves: 4

Ingredients

  • ½ heads (medium size) green cabbage
  • 1 tbsp Butter (omit for dairy-free)
  • 1 tbsp Olive oil
  • 1 tbsp Apple cider vinegar or Bragg’s white wine vinegar (optional, adds flavor)
  • ¼ teaspoons Salt
  • ¼ teaspoons Coarsely ground black pepper
  • ¼ teaspoons onion powder
  • 1 cup Kitchen Basics Low Sodium Chicken Broth

Preparation

Cut the cabbage into 4 wedges.

Melt the butter in a small Dutch oven or large soup pot. Add everything else except the cabbage. Stir.

Add the cabbage wedges and bring to a boil. Reduce heat, cover, simmer about 10-15 minutes or until fork tender. Gently flip the cabbage quarters about halfway through cooking.

Use a slotted spoon to remove the cabbage from the pan and serve.

Remarks:
• Cabbage varies in size and weight, so nutrient estimates are based on a “medium” sized head of cabbage that weighs 32 ounces. For more servings, use a larger Dutch oven, double all the ingredients and use the whole cabbage. The cooking time should be the same.
• These are rough nutritional estimates made using My Fitness Pal’s online recipe analyzer. For this recipe, all ingredients are included, although most of the liquid will remain in the pan. There is no definite way to determine how much spice or fat is actually absorbed by cabbage.
